Taste the difference of a 24 days aged steak. THE DRY-AGED REVOLUTION Until the 1960s, nearly all beef in AmericaΓ‚ was dry-aged. Then the invention of vacuumΓ‚ packaging launched an era of wet-aged beef,Γ‚ embraced by meatpackers because meat agedΓ‚ faster and retained more water weight (hence,Γ‚ more profit).Γ‚ The dry-aged revolution has redefined everything.Γ‚ Only the top steak houses attempt this process, in fact, there are only a few restaurants in the state of Michigan that advertise dry-aging, most are located in a major city and order in their Dry-Aged beef.
