Prime Brisket
Prime grade beef brisket, rubbed with salt and pepper and slow smoked for 12 hours.
Pulled Pork W/ Cracklins
Berkshire pork from Kilgus Farms, smoked on the bone served with crispy pork crackilns.
Baby Back Ribs
Chicago means baby backs, and these are done with care by our pitmaster. Dusted with Mel's sweet rib rub and smoked for hours, until not quite falling off the bone.
Turkey
Lean but juicy slow smoked turkey breast.
