Flaky oven baked buns are made by hand in small batches with only 5 ingredients: flour, water, oil, sesame, and salt. The simplicity of the ingredients are masterfully manipulated to create an artisan baked buns with flaky layers. The dough is rolled out with roux to create layers. It is rolled out and folded 3 times with precision force to maintain the individual layers. Topped with sesame, it is baked until each of the layers separate creating a puffed up bun with space in the middle that can be filled with all types of fillings like egg, sliced meats, and vegetables.

#2 Deep Fried Cruller 油條
Deep fried cruller dough is made in small batches in house every day. The dough requires extensive physical manipulation as our staff folds and kneads out these 15 pound pieces. Each piece is flipped and folded 3 times to stretch out the gluten and left to rest 30 minutes in between is allow the gluten to resettle. The end result is a dough that we cut up and deep fry every morning that expands to create a crispy texture on the outside but still chewy on the inside. One of the most popular ways to enjoy these cruller is to dip them in some hot soy milk so it soaks it all up or use it as an ingredient in your hot-pots to soak up all that broth.

A classic favorite. We start from grinding up fresh pork in house and mixing it with a combination of green onions, gelatin broth (that we make from scratch in house), and seasonings. Each one of our XLB is hand made with small batches of dough using only high-quality flour (avoiding flours like tapioca or potato starch which some restaurants use in the mix in order to bleach the color of the skin but reduces the natural chewiness of the skin), rolled out and wrapped one by one ready to be steamed for your enjoyment. Eating it with a bit of our ginger slices and vinegar it truly hits the spot when you’re craving some XLB.

Using fresh in house ground pork and hand mixing all the ingredients it leaves room a chewy and soft filling. A bread pocket stuffed to the brim with fresh leeks, egg, vermicelli, and brine shrimp. We start with fresh leeks diced into small pieces mixed together with a stir fry of eggs, small brine shrimp, and vermicelli. After seasoning hand rolled out dough is filled with this filling and folded by hand like braids to enclose the pocket. When prepared, each pocket is fried on low heat so the aromas and juices from the leeks are released and trapped to soak the vermicelli and egg combination. When you bite into these pockets the overwhelming intoxicating scent of leeks are released and the soft filling with the crispy exterior is sure to satisfy your cravings.
