We were introduced to two new hops recently, similar yet different at once. Both promised a lack of harsh bitterness, and flavours and aromas best identified as tropical fruit and daiquiris. The aromas in the brewery on dry hopping day were incredible, and we think you'll find if you allow this beer time to gently warm in the sun it will continue to offer of island rhythms until the bottom of the glass.

We knew we had to celebrate our first year in a big way. Anticipate an incredible, fruit forward aroma of ripe banana, mandarin oranges, Hubba Bubba Original, and white pepper. Traynor Family Vineyard Hot Rocket Pet-nat | 750ml, 10.3% Abv

Introduce yourself to the unique taste of our Hot Rocket 22' wine, a fun, deep purple sparkler made from 100% Baco Noir which were lightly pressed after 10 days of maceration. It was then left to wild ferment in stainless steel tanks until ready to be bottled and naturally carbonated at the end of the fermentation for approximately 2 months. This wine has a dense purple colour, with a light and effervescent body with notes of tart cherries and fresh blackcurrant.

Château Haut Grelot Sauvignon Blanc Côtes De Blaye 2022 | 750ml, 12.5% Abv

Château Haut Grelot is located near the Gironde Estuaire, north of the town of Bordeaux. Haut Grelot has been making wine and taking great care of their vineyards since its establishment in 1920!This is a classic Bordeaux blend: 90% Sauvignon Blanc, 5% Sémillon & 5% Muscadelle. It's a floral, crisp and elegant wine that offers exotic fruit aromas: grapefruit, gooseberry and wild herbs that intermingle with ample citrus fruit on the palate. It has a generous weight, roundness and a perfect balance that let's you savour every drop.

Traynor Family Vineyard Sauvignon Blanc | 750ml, 12.5% Abv

Introduce yourself to the fresh and vibrant flavours of Traynor Vineyard vegan Sauvignon Blanc, fermented and aged at their winery in Prince Edward County. With a bright bouquet of white peach, lemongrass, and clove, this wine is perfect for those who appreciate a crisp and refreshing palette. This wine is a delightful, lighter-styled Sauvignon Blanc compared to the previous vintages they have released. Aged for six months in stainless steel and bottled unfiltered, this wine is perfect for those who enjoy the natural taste of wine.

Château Plaisance Les Palues Bordeaux Supérieur 2016 | 750ml, 13.6% Abv

The construction of Château Plaisance dates back to the 1780s, however its vineyards are much older. Bordering the Margaux appellation, Château Plaisance's vineyards overlooks the Garonne River and counts with ten hectares.The soils name 'palues' are mostly composed of clay, with a small percentage of sand. Its particularity is that is is located only a few meters away from the Garonne River. The 'palues' were gained on the river thanks to a draining technique implemented in Bordeaux by the Dutch. The 'palues' contain a large amount of sediments that were before underwater, making it a rich and fertile soil. In the past, wines produced on 'palues' were considered the best of their appellation.An elegantly matured Bordeaux Superieur with surprising persistence. Named after the limestone soils ('palues') of the vineyards, this blend of 70% Merlot with 20% Cabernet Sauvignon and 10% Petit Verdot is showing lovely earthy, leather and licorice notes along with cherry, raspberry, and blackcurrant.

Clos Del Rey Le Sabina Rouge Côtes Du Roussillon Villages 2021 | 750ml, 14.5% Abv

Established in 2001 by Jacques Montagné, Clos del Rey is located in the heart of the appellation of Maury. Although Maury is best known for its sweet, port-like wines, Clos del Rey only produces dry red wines.The Mediterranean influences of earthy, wild herbs make this robust red wine dense and concentrated, yet very lively. It displays a somewhat stony and intense finish that is still infectiously juicy. When it opens up, the intensity of the black fruits, the elusive minerality, the elegance and great balance become dramatically evident. Julien Montagne doesn't hide his wine behind masks; he employs no tricks. This is a wine made in the vineyards — truly authentic.

Domaine Baud Blanc De Blanc Crémant Du Jura Brut Nv | 750ml, 12.0% Abv

The Baud estate dates back to 1742, today the 9th generation manages the winery. Siblings Clementine and Bastien, both under 30, are making some of the best-value wines in the area. Jura is that narrow valley in the remote hills between Burgundy and Switzerland, which millions of years ago was covered by an Ocean and today still bares many of the fossils from that time. If you kick a stone in a Jura vineyard, it will probably be a fossil!This sparkler, or Crémant, is made in the traditional Champagne style, where the second fermentation happens inside the bottle. Expect rich aromatics of apple fruit with citrus, toasted brioche and a striking minerality. It sparks a great balance between creaminess and vivacity. If you like Champagne, but not the price tag, then this is the wine of choice for you.

Mas Carlot Générations Rosé Costières De Nîmes 2022 | 750ml, 13.5% Abv

Mas Carlot is situated in the south of the Rhône Valley, extending across 76 hectares of pebbly land southeast of Nîmes.This seductive rosé is a traditional blend of Grenache (50%), Syrah (40%) and Mourvèdre (10%). Beautifully pale in colour and soft in texture, this is probably the most fashionable vintage to date. Delicate aromas of raspberry, watermelon, citrus fruits & herbes de Provence flow from the glass. The flavours are fruity, dry and crisp with an elegant balance & structure. This is a serious rose at an accessible price.

Nicholas Pearce Crew Sauvage Pinot Noir 2021 | 750ml, 12.5% Abv

A true Niagara Villages wine focused on a blend of organic, biodynamic, and uncertified sustainably farmed vineyards throughout the Peninsula with a focus on Quarry Road (Vinemount Ridge), Cherry Road (Twenty Mile Bench) & the Tintern Vineyard. The grapes are harvested, destemmed, wild fermented "whole berry" for 18 days, before gravity flow takes them into French barrels. This fresh Pinot Noir was then left to age for 16 months in barrel before bottling.The 2021 vintage is marked by elegance over power, brimming with brightness and approachability straight out of the gate, with not hard edges. Light ruby-red in the glass, high toned aromas of cherry, strawberry, pomegranate, backed by roasted herbs, spice, and pepper. Great weight and poise for Ontario, but still the light to medium bodied Pinot Spectrum with balanced tannins and acids holding on to fine and lengthy finish.Certainly a vintage on the edge, marked by many cold and wet days. However, as every mother does, mother (nature) kicked in and saved the day with a gloriously warm and dry finally to the cooler growing season.

Punset Neh! Langhe Rosso 2019 | 750ml, 13.0% Abv

Punset is an innovator when it comes to organic wine. Inheriting the estate in 1982, Marina Marcarino is a fifth generation winemaker.This red is called 'Neh! after a popular Piedmontese slang used to finish a sentence, similar to 'eh. It is a blend of Dolcetto, Barbera and Nebbiolo, the local red grapes in Piedmont. This wine has deep fruity aromas with red summer fruits, like black cherry, strawberries and raspberries. The colour is dark ruby and the wine shows good structure, acidity and medium body with a distinct earthiness.

Tessari Grisela Soave Classico Doc 2021 | 750ml, 12.5% Abv

Wines from Soave are made with the local grape Garganega. Cantina Tessari has its vineyards in the volcanic hills above il Castello di Soave, which is the original - or 'Classico' - wine growing area in Soave, the best vines are located here.Tessari’s golden straw coloured Grisela is the backbone of the vineyard; a delicious entry level wine that is meant to be enjoyed on any occasion. Melba toast, elderflower and chamomile aromatics fill the glass with a notable mineral quality. The taste of crushed seashells dance on your tongue with a fun duo of stone fruit and citrus. The finish is refreshing with balanced acidity.

Traynor Family Vineyard Cabernet Franc | 750ml, 13.1% Abv

Introduce yourself to the unique taste of their Cabernet Franc wine, crafted from 100% Cabernet Franc grapes. This wine is macerated and fermented on its skins for 30 days, aged in French oak barrels for nine months, blended in a stainless steel tank shortly before bottling.
