Spritzy is our brand of Hard Seltzer that isn’t meant to be complicated, but it does politely separate itself from the unremarkable flavors of mass marketed seltzer. We love the drinkability of these light beverages so we decided to put our spin on it. Our focus is to create refreshing profiles that use ZERO extracts or “natural” flavorings, instead using 100% real fruit & spices. This version is conditioned on grapefruit and hibiscus flower for a pleasant citrus kick, a light sweetness, tartness and an appealing pink hue. We used three different lots of Nelson (different acres and blends) in this beer that we hand selected while in NZ from a singular farm to show off Nelson’s best qualities of white grape, melon and pineapple. 7%

Simmer Dim Ba Barleywine 375ml Bottle
This Barleywine was skillfully crafted with almost 90% Scottish malted barley from Simpson’s Malt, which is also one of the malts that Highland Park incorporates in their whisky. During aging in the oak the base beer develops intensely rich attributes resembling toffee, molasses, wild flower honey soaked almonds, Turkish delight and rustic rye loaf. The peat smoke of the whisky, restrained as it is, still imbues Simmer Dim with the most intriguing campfire background that plays nicely with some boozy heat. 14% ABV

With 84 pounds of tart cherries per oak barrel, Stone Age Love radiates with flavors found in summer stone fruits. This sour showcases notes of fresh-picked cherries, juicy peaches, and tart plums with hints of melon. 7.2%

As apricots ripen in the orchard, these delicate, golden-orange fruits develop complex tartness and funky floral aroma. Our fascination with the flavors this fruit exhibits inspired the creation of Map of the Sun. Golden sour beer was conditioned on apricots in oak barrels, maximizing the rich jammy notes and velvety mouth expressed by the fruit. This beer celebrates the beginning of Summer highlighting all of the delightfully sour nuances of an apricot.
Hard Cuts Ba Barleywine/munichwine Blend 375ml Bottle
Hard Cuts is a blend of two different collaborative projects with our dear friend Brad Clark of Private Press. 2 oak aged Munichwines and a Double Oak aged Munichwine were blended with three barrels of a Barleywine brewed with a high percentage of rye and also aged in various rye whiskey barrels. Deep and sexy aromas of molasses and Jamaican dark rum, 10 year tawny port, sticky apricot and brûléed meringue with a dusting of clove are followed by flavors of honey processed coffee, dried cherry, rye loaf crust, date and fig as well as a long lasting barrel char and tobacco finish. 16%
The Edge Of Time Ba Barleywine 375ml Bottle
The Edge of Time is a oak aged Barleywine. This is Batch 2 which conditioned for 14 months in Willett Bourbon barrels. Pronounced fig and date character is intertwined with baked cinnamon rolls, toffee drizzle and oaky vanilla from the slow maturation. We recommend allowing your pour too warm to close to room temperature and allowing the carbonation to diminish so that all of the rich flavors may speak without restriction. 14.8%
Nilla Nest 375ml Bottle
Horus and Cellarmaker are back at it again with the release of our third round of collaboration barrel aged stouts. Nilla Nest was aged in Willett Rye barrels for 22 months and then conditioned on 3 pounds per barrel of vanilla beans from Tanzania, Peru and East Timor. The vanilla has layers and layers of decadent flavor ranging from Luxardo cherry to brownie batter, creme brulee to orange citrus.
Adams Parachute Brett Saison 500ml Bottle
Adams Parachute is a collaborative brew with Casey Brewing and Blending that focuses on locally sourced ingredients. For this Brett Saison we sourced our malted barley, oats and rye from Alameda’s Admiral Maltings, Triple Pearl hops from Hoppin’ Raccoon Ranch south of Sacramento in Clarksburg, CA and yeast and brettanomyces from The Yeast Bay. The beer was brewed and fermented in stainless and then bottle conditioned for 10 months before release. The result is redolent of Spanish orange and white wine with some Brett funk. The flavor is pleasantly tart and layered with eucalyptus candy, rustic grains, tamarind and spicy hops. 6.4%

A singular fermenter in our brewery has been dedicated to a continuous fermentation for many years. This solera-style saison is the product of that fermentation. Lost Wisdom is the essence of the mixed culture program at Cellarmaker; it is the flavor of the house, as most funky beers are inoculated with the not so much longer wild yeast and bacteria that have taken residence in it. In fact, due to its identity and longevity there is probably not a more true Cellarmaker beer. Those of you who have not enjoyed its bright aromas and piquant flavor are in for a real treat that intrigues us still. 6%

Midnight Sea Ba Stout 22oz Bottle
Batten down the hatches and prepare yourself for a collaboration three years in the making.Toppling Goliath and Cellarmaker are releasing their own renditions of Midnight Sea, a blended bourbon-aged imperial stout. In February of 2020, the dark malt masters of Toppling Goliath visited our San Francisco brewery and devised a deeply rich stout recipe. This inky, oily magic was first aged in a variety of bourbon barrels including Weller, Early Times, Dickel, and Woodford Double Oaked. We then further aged Midnight Sea in a second set of Weller barrels. When it was time to bring the components together we worked closely with the crew from Toppling Goliath to create a profile that could stand on its own but also be half of a two-part blend with Toppling Goliath's own version of Midnight Sea.

Cellarmaker - Pinot Noir 2019 Bottle
Cellarmaker Brewing’s first wine release. Our 2019 Pinot Noir has fruit sourced from the West Sonoma Coast AVA, aged 22 months in neutral French Oak Barrels with 50% whole cluster fermentation. This wine is packed with aromas of cranberry, strawberry preserves and rose petal. On the palate we get bing cherry, cedar, blackberry and white pepper. A silky mouthfeel and bright acidity contribute to a refreshing and balanced finish.
Obsidian Ridge - Cabernet Sauvignon 2021
You’ll be hard-pressed to find a better example of darkly powerful Cabernet Sauvignon for the money in all of California. The volcanic soils of Peter Molnar’s alien vineyard are riddled with chunks of glassy black obsidian. The soils here give rise to a unique and appetizing strain of Cabernet Sauvignon, dense with blackberry, broken rock, cedary spice and long, persistent fruit on the finish. If this wine is any indication, Lake County has arrived as a premier appellation.
Pol Clement - Sparkling Brut 187ml
The flavor profile reveals apple, pear, and a yeasty undertone all the way to the bold and refreshing lemon-crisp finish. It offers the characteristic food versatility that many are looking for in a sparkling wine or simply as an appetizing aperitif.
Cellarmaker - Chardonnay 2021 Bottle
Our 2021 Chardonnay is comprised of fruit from the English Hill and Taylor Ridge Vineyards, both located between Sebastopol and the Pacific Ocean. Extreme weather swings from warm days to cool foggy nights and mornings create an expressive Chardonnay with a high impact tropical fruit aroma. Oak character is subtle as the barrels we used were just shy of neutral. Flavors and aromas of guava, pineapple, lemon, lilac and subtle toast. Highly refreshing.
