Makiri Junmai Ginjo
Makiri is the Yamagata term for a fisherman's knife, and the cutting acidity of this sake from Tohoku Meijo brewery lends shape to the term. It's a sharp, dry sake that performs best when served with food, especially rich, fatty foods like pork and melted cheese. [ABV: 16%] (10.1oz/300ml).
Yuki Otoko Junmai Cup
A classic dry sake inspired by local lore, Yuki Otoko is the bigfoot or yeti of Niigata, said to haunt its mountains and occasionally help travelers through the mountain trails. An excellent intro to classic Niigata sake. Rice is Miyama Nishiki milled to 60%, water is soft from an underground current originating at Mt. Makihata. [ABV: 15.5%] (6oz/180ml).
