His passion is to cultivate coffee and he has been doing this most of his 62 years of life.This coffee had a dried fermentation which means that no water was used during the fermentation process. Then it was de-pulped and washed to increase sweetness and body in this coffee.

This coffee comes from our founder's family farm in Colombia and is the coffee that started The Colombian. This year, our Uncle Felipe's coffee is a blend of castillo and tabi varietals. It's going to be a much sweeter lot grown anywhere between 1600-1900m, fermented in cherry for 24 hours, then in mucilage for 48 hours and then washed and dried in mechanical dryers for better control over the drying process. This year it tastes like plum, apple, brown sugar and caramel. This is a very sweet coffee and one of the best lots produced by Felipe yet!
