Sausage & Eggs
Two 12-hour sous-vide italian fennel sausages, two 4-hour sous-vide eggs, buttered sourdough.We cook our sausages for 12 hours to keep the sausages incredibly juicy and moist. The sous-vide cooking technique traps moisture inside the sausage, maintaining the pink pigment so don't be alarmed if it is pinker than usual! The flavors are incredible, juicy and complex. If you happen to warm it up, please be gentle. Overheating the sausage will loose a lot of the natural juices to leak and reduce its flavor.

Japanese Blueberry Mochi Waffle
Emulsified blueberries, whole blueberries, mochi flour, served with organic grade a maple syrup.*Contains wheat, eggs, dairyThis took many attempts to perfect! We started with a simple blueberry waffle by adding blueberries. It wasn't very flavorful. Next, we added more blueberries, smashed blueberries and pure blueberry extract. It smelled better but still lacking in blueberry flavor. We then emulsified blueberries into a sauce and folded that into our batter. It was a little wet, so we added more flour. We eventually found a perfect chewing texture by adding mochi and crisp from the regular flour. It has become a staple and keeps us nostalgic of childhood snacks. Who said waffles couldn't be elevated?

Brown Butter Dark Chocolate Cookie

We brown our butter slowly for 2 hours to harvest the separated proteins, then fold in cold butter so that it would become crispy in the oven but keep the soft and chewy center. Coco De Mer
House made ritual dark chocolate, coconut, SPRO (espresso), condensed & fresh milk.We created this wonderful drink using our tres leches milk and artisanal chocolate. This exotic coconut based mocha reminds of us the Coco de mer. It is an incredibly rare coconut palm endemic to the country of Seychelles in the Indian ocean. It takes 25-50 years to reach maturity, and 6-10 years for the seed to ripen. The Coco de mer seed is the largest and heaviest seed in the world and often sought after by collectors. Join us in enjoying this wonderfully creamy and tropical concoction.

Seasonal Drinks (Coffee based)
Madagascar
Madagascar vanilla, dark muscovado sugar, SPRO (espresso), milk. We don't use syrups and pumps unless we make it in house. For this popular drink, we were able to craft a higher quality version using pure Madagascan vanilla. The sweetness comes from dark muscovado, which originates from the country of Mauritius in East Africa.
Mardi Gras (cold Only)
24-hour single-origin cold brew, chicory root, raw cane sugar, milk.Popularized in New Orleans, we cook real and natural chicory roots into our cold brew. New Orleans is known for its instant coffee roasted with chicory. It creates a bolder, more floral and complex profile to a traditional cold brew with milk. This drink cannot be decaf, since it takes 24+ hours to brew the cold brew with chicory.
Indian Summer
Rose petal simple syrup, cardamom, SPRO (espresso), milk.We cook our rose petals in house and reduce it down to a syrup. We fold in ground cardamom with the shot, giving a gentle but floral approach to the drink. We do not use syrups and pumps unless it is made in-house. This delicious drink is worth the labor-intensive work.
Black Swan
Organic activated charcoal, wildflower honey, SPRO (espresso), milk.Un-bonded natural, activated charcoal is known to have incredible benefits, specifically to removing toxins that are foreign to the body. This is a great detox for those looking for a regular or occasional cleanse. The body is similar to a mocha, creamy and equally delightful.
Katβs Pajamas
Ginger root, turmeric root, wildflower honey, cinnamon, SPRO (espresso), milk.Similar to the golden latte, we only use pure and natural ingredients to keep the health benefits in this drink. We never use syrups and pumps, especially on a drink like this, which would defeat the purpose of staying healthy.
Island Hop
Ube, Coconut, Spro (espresso), Housemade Tres Leches Milk. Typically, this drink is made at other cafes completely un-caffeinated because of the difficulty in pairing spro (espresso) based drinks with ube. We were able to craft this wonderful drink with spro without loosing the personality it was when to showcase. Our milk uses a housemade tres leches milk, a combination of coconut, condensed milk and whole milk. Milk alternatives are available.
Kyoto Kiss
Japanese white miso, dark muscovado, spro (espresso), milkWe fold in organic Japanese white miso, Mauritian (East African) dark muscovado with the shot. The end result is a complex, rich and delightful sweetness that resembles salted caramel.
Smoke & Mirrors (cold Only)
Smoked agave, rose petal simple syrup, SPRO, edible gold dust.A simple and delightful drink, is served Americano-style. We use a smoked agave to resemble a Mezcal. For aromatics, we use a house made rose syrup, where we cook roses and reduced down to a syrup. It is a delicate drink that is still meant to highlight the quality of our espresso while adding the floral note. Similar to cocktails, we serve this on the rocks (iced) only and without milk.
Pixie Dust
Honey yuzu, sancho pepper, SPRO (espresso), oatly oat milk, liquid-nitro freeze-dried yuzu dust, orange zest.Featured on Food & Wine section of SF Chronicle, this popular drink showcases complex flavors and balance between acidity and sweetness. Sansho pepper is not spicy and gives a slight tingling sensation towards the tip of your tongue. We also add orange zest and nitro freeze dried yuzu as aromatics to keep the drink refreshing.
Tea Thyme
Black currant tea syrup, thyme, SPRO (espresso), oatly oat milk.We brew black tea infused with black currants into a syrup and fold in thyme to add depth & complexity to this wonderful drink. The herbaceousness of the thyme really showcases how floral approach can work wonderfully with espresso.

Hong Kong Milk Tea
English breakfast tea, molasses, reduced milk.Traditional Hong Kong style milk tea is known for its robust depth of flavor. Their secret is the a large filter that resembled a silk sock (known as pantyhose milk tea) to create an intense richness of flavor. We were able to mimic that incredible tea using a prolonged steeping method, using high quality tea, added a touch of molasses for viscosity & mouthfeel, and using a mixture of reduced & evaporated milk.Delicious in milk alternative versions as well.
