Lamb Shank Platter
Our Lamb Shank is slow cooked in tomato sauce with herbs, garlic and onion, until it is tender-falling off the bone, juicy, and flavorful; served with any two sides of your choice (white rice, lentil rice, sweet rice, spicy rice, okra, garbanzo beans, spinach, cabbage, four kinds of salad - Shirazi/Garden/Tabbouli/Black Eyed Bean salad, grape leaves, hummus, and more). Prepared fresh, and free of additives/preservatives. Persian food, similar to other Middle Eastern flavors is subtle yet distinct. Persian food is combination of rice with meat, vegetables & nuts. Herbs & fruits are also frequently used. Persian cuisine is one of the oldest in the world. Koobideh comes from the Persian word koobidan meaning slamming which refers to the style in which the meat is prepared. Traditionally, the meat was placed on a flat stone and smashed with a wooden mallet.Kabobi’s Koobideh Kabob is prepared with fine ground lamb sirloin meat, mixed with ground pepper & chopped onions; and char-grilled. It is rich source of protein, vitamin B6, B12, zinc, iron, niacin, phosphorus & selenium, but is also high in cholesterol.
